Ingredients for people 6

• 2 small polyps or 4 galletti.
• 10 ripe tomatoes with a firm pulp For marinade.
• Olive oil
• Lemon juice
• White yogurt
• Salt
• Pepper
• 2 onions
• Saffron in powder form
• Butter

Preparation

The cockerel is tastier than chicken. After boning cut the meat into chunks and leave it for 4-5 hours at least in a marinade made with olive oil, lemon juice, salt, pepper, saffron dissolved in a little hot water, yogurt and finely chopped onions (or better reduced in puree with an electric mixer). During the time when you will leave the chicken pieces to marinate in the fridge, take care to turn the meat over again. Put the meat on the skewers and cook on the coals not too strong, taking care to brush frequently during cooking and on both sides the pieces of chicken with a sauce obtained by melting butter to which you have added salt, pepper, lemon juice and saffron.
