Vegetables and meat in saucepan

Ingredients for people 6

• 4 tablespoons of oil or clarified butter
• 4 large onions, cut into slices

• 2 peeled and sliced ​​apples
• 1 small eggplant, peeled and thinly sliced
• 2 peeled and sliced ​​carrots
• 3 tomatoes peeled and cut into slices
• 1 cup of pitted plums
• 1 cup of dried apricots
• 1 teaspoon of mixed Iranian spices (advieh)
• ¼ teaspoon of Turmeric
• Salt
• Pepper
• 1 cup of tomato puree
• 1 / 2 teaspoon of powdered saffron pistils and dissolved in 1 hot water spoon
• 1 topping spoon (somoq)
• 1 dehydrated lemon teaspoon powder (limu ammoni) or lemon 2 juice.

Preparation

Preheat the oven to 200 ° C. Pour 2 tablespoons of oil into a wide-open baking dish. After having washed and cut all the ingredients into slices that are not too thin, arrange layers of meat, vegetables and fruit in the pan in the following order: onions, meat, garlic, apples, aubergines, carrots, tomatoes and potatoes. Finally a layer of plums and apricots. Pour the remaining oil on top of it. Sprinkle with the mixture of spices, turmeric, salt and pepper. Mix the tomato sauce, saffron, somoq, lemon powder or lemon juice, and pour over it. Cover and cook in the oven for 1 now and 2 until the meat is well cooked and tender. Serve in the saucepan accompanied with bread, yogurt and herbs.
