Fish fillets with garlic and bitter orange

Ingredients for people 4

• 4 sea bass fillets (or sea bass, red snapper)
• 4 tablespoons of oil or ghee
• 2 white flour spoons
• Salt
• Pepper
• 8 crushed garlic cloves
• ¼ cup of chopped walnuts
• ½ teaspoon of turmeric
• ½ cup of fish broth or water
• 1 cup of bitter orange juice (or 1 / 2 cup of fresh orange juice and 1 / 4 of lemon juice cup).

Preparation

Wash the fish fillets, pat them dry with a dry cloth, rub them on all sides with salt and flour them on both sides. Heat the oil in a low and large pan over medium heat, arrange the fillets in the pan and brown them on both sides for 2 '. Set the fillets aside. In the thick pan heat the oil and fry the garlic for 5 'until it appears golden and crunchy, but do not burn it.
Add the pepper and turmeric and continue to cook for 1 minute. Pour the broth into the pan. Meanwhile, separately, dissolve a spoonful of white flour in orange juice and pour it into the pan. Bring to a boil, add salt and set aside.
Just before serving, put the fillets back in the pan and complete the cooking. Remove from heat and serve with saffron white rice.
