Kotlet and gusht

Meat and potato cutlets

Ingredients for people 4

• ½ kg of minced meat (beef or veal)
• 2 medium thick potatoes
• 1 medium onion
• 2 eggs
• Salt
• Pepper
• ½ teaspoon of cinnamon powder
• ½ tablespoon of powdered saffron pistils dissolved in 1 tablespoon of hot water
• 2 teaspoon of turmeric
• 1 cup of breadcrumbs
• Fry oil

Preparation

Boil the potatoes in their skins. Once cooked, peel them and cut them into short thin strips using a potato peeler. Add the finely chopped onions; jumbled up. Work the minced meat for a few minutes with the salt, pepper, melted saffron, turmeric and cinnamon. Add the mixture of potatoes and onions and continue to work the mixture. Heat the oil in a pan and with wet hands take a small handful of the mixture at a time giving it an oval shape and slightly flattened, then pass the meatballs in the breadcrumbs before browning them on both sides in the oil. Serve with fried potatoes, herbs, bread and pickles.
