Peach chicken stew
Ingredients for people 4
• 450 g of chicken breast or duck cut into strips
• 5 peaches with firm flesh
• A few tablespoons of oil to fry
• 2 finely sliced onions
• 2 spoons of sugar
• The juice of 1 lemon
• Chopped parsley to garnish.
Fry the chicken with the onions until half cooked (for about 20 ′). Add salt, pepper and spices. Incorporate 2-3 glasses of water, reduce the heat, cover the pot and simmer for 30 ′. Meanwhile wash and peel the peaches, cut them into wedges and brown them evenly over the entire surface in a little oil or butter. Incorporate them into the meat and after adding the lemon juice and the sugar, finish cooking on low heat for 10-15 ′.
This dish must have a sweet sour taste. Then adjust if necessary towards the end with sugar or lemon to balance the flavors. Sprinkle with finely chopped parsley and serve.
