Shir berenj - Rose-scented rice pudding

INGREDIENTS FOR 4- 6 PEOPLE

• 8 tablespoons of short-grain rice (the soup type)
• 480 ml of water
• 1 pinch of salt
• 750 ml of milk
• 4 tablespoons of liquid cream
• 4 tablespoons of rose water
• 3 tablespoons of sugar (according to personal taste)
• 2-3 crushed cardamom pods (or cardamom powder)
• 1 handful of chopped almonds
• Cocoa powder

PREPARATION
Cook the rice with the lid with the water and a pinch of salt over low heat for 20 '. Add the milk and cream, letting it cook slowly for about an hour until the rice loses its shape and the mixture begins to thicken. When it is well set, add the rose water and the crushed cardamom berries to a mortar or powder and continue to simmer for a few minutes. Remove from heat and let cool. If you choose to prepare the sugar-free variant, you can then offer it with honey or fruit preserves.
