INGREDIENTS
For the filling:
• 500 g of unglazed dates pitted and finely chopped.
• 1 spoonful of fresh ginger or 1 teaspoon of powdered ginger
• 2 Tablespoons of oil
• 2 Tablespoons of water
Variant for filling:
It is possible to replace dates with the same amount of nuts and I ginger with cinnamon and a few tablespoons of honey.
For pasta:
• 350 g of sieved flour
• 300 ml of oil or butter
• 1 teaspoon of cumin ground in a mortar
• 2 teaspoons of sugar
• 1Teaspoon of baking powder
• 1 pinch of baking soda
• 120 ml of water
PREPARATION
Mix (also using an electric mixer) the flour with the oil and cumin and let it rest for 24 hours. In a bowl, mix the sugar, baking powder and baking soda and dissolve them well in the water. Gradually add the liquid obtained to the rested dough, continuing to work the mass until it is completely absorbed and the dough does not stick to your hands. On a floured pastry board, knead it for another 10 'and after having wrapped it in a damp cloth let it rest for at least 2 hours. Roll it out with the help of a rolling pin into a sheet 1/2 cm high. Preheat the oven to 180 ° C. Cut out the dough into circular slices with the bottom of a glass. Arrange a teaspoon of the filling in the center of half of the washers. Cover each stuffed washer with an equal one of the same size and close the edges tightly with wet hands or milk. Line up the biscuits thus obtained on the oven plate at a distance of 2 cm from each other and bake for 20-25 'in the medium level of the oven until they are golden brown.
