Shur - Mixed salted vegetables

INGREDIENTS
For the preparation of a vegetable pot with the capacity of 1 liter:
• Celery
• Carrots
• Cauliflower
• Whole onions
• Verza in strips
• Garlic in wedges
• Peppers
• Parsley
• Salt
• Pepper
• Cumin
• A glass of vinegar

PREPARATION

Use vegetables in variable quantities according to personal taste; the important thing is that they are fresh vegetables, with a healthy and hard pulp. Wash and clean them carefully. Cut them into small wells or strips. Leave the onions whole and coarsely chop the parsley. Dry the vegetables perfectly by spreading them on a cloth and possibly leaving them in the sun so that they lose all the humidity. Once dry, arrange them for quality (and therefore for color) in layers in a glass jar, adjusting, layer by layer, with salt, cumin and pepper (if you like you can add chilli). Boil some salted water. Let it cool and slowly pour it into the jar over the vegetables leaving space to finally add a glass of white wine vinegar, added to which the vegetables must be covered by at least a few millimeters. Close the jar hermetically and keep it in a cool and dark place for a month before consuming the vegetables.
