Yogurt omelette

Ingredients for people 4

• 1 jar of compact whole yogurt
• 4 eggs
• 50 g of fresh chives (or 2 spoons dried)
• 1 fine grated carrot
• 1 spoon of flaked almonds
• 1 spoon of pistachios without salt flakes
• 1 spoon of white flour
• 1 / 2 teaspoon of powdered saffron pistils
• Salt
• Pepper
• 4 spoons of cooking oil

Preparation

Chop the chives after cleaning them well. Peel the carrots, boil them for a few minutes to soften them, then cut them very finely. Dissolve the saffron in a little hot water. Break the eggs into a bowl, mix in the yogurt, salt and pepper, flour, saffron dissolved in hot water and beat well; to obtain a more homogeneous mixture you can use the electric whisk. Finally add the chives, carrots, almonds and pistachios to the mixture. Heat a little oil in a pan and cook on the stove or in the oven as per the previous recipes.
