Zucchini omelette

INGREDIENTS FOR PEOPLE 4

• 5 medium zucchini
• 4 whole egg
• 3 onions
• 1 teaspoon of powdered saffron pistils dissolved in a little hot water
• 150 g of oil (for cooking)
• Salt
• Pepper
• l / 2 teaspoon of turmeric

PREPARATION

Fry the onions in 3 or 4 tablespoons of oil for 10 ', add the courgettes, washed and cut into rounds. Cook without letting them stick to the bottom of the pan. When the water released by the zucchini has evaporated, add the saffron that you have dissolved in a little hot water. Season with salt and pepper and add the turmeric. Remove from heat and let cool. Break the eggs, add salt, add the courgettes, mix well and after heating a little oil in the pan, pour the mixture and cook covered over the gas flame or in the oven at 150 ° C. In the latter case it will not be necessary to turn the omelette.
